Structure of Zymosan
Zymosan is a naturally occurring water-insoluble macromolecule extracted from the cell wall of Saccharomyces cerevisiae, and is the main component of the cell wall. The structure of zymosan consists of repeating glucose units linked by beta-(1,3)-glycosidic bonds, showing a unique triple ultra-helix which gives it the strongest immune activity.

Applications of Zymosan
- Immune activator: Zymosan is the first polysaccharide discovered and used to enhance immunity, which activates both innate and acquired immunity by enhancing the functions of macrophages and natural killer cells.
- Functional food (dietary fiber): Zymosan promotes intestinal peristalsis, absorb harmful substances in the intestine, and promote the activation of helpful bacteria in the intestine.
- Food additives: With strong water retention, emulsification stability, and high viscosity, zymosan is added to seasonings, desserts, meat products, etc.

- Complex extraction methods: Enzymolysis-alkali extraction and enzymolysis-ultrasound-assisted extraction can effectively improve the yield of zymosan, reduce the protein content, and ensure the complete glucan chains and biological activity of the product.
