Maltooligosaccharide is a kind of homooligosaccharide and is made up of 3-10 α-glucose monomers that are bonded together by α-1,4 glycosidic linkages. This structure enables it to be broken down into glucose by human intestinal glucoamylase-maltase, making it easily digestible in the small intestine. It has been shown that maltooligosaccharide undergoes incomplete cleavage and acts as a substrate for intestinal microbiota, exhibiting a prebiotic effect. Besides, maltooligosaccharide displays the effect of lowering harmful intestinal microorganisms and increasing beneficial Bifidobacterium. In addition, it improves colon health by enhancing intestinal peristalsis and preventing constipation. Maltooligosaccharide may exhibit immunomodulatory effects, influencing the immune system in a way that could potentially regulate or modify immune responses. These enzymes break down the side linkages in starch, followed by hydrolysis using various α-amylases. We prepare maltooligosaccharides by transglycosylation reactions. Transglycosylation is the process by which glycosidic linkages are formed between starting units. This reaction leads to the production of a higher molecular weight product. Transglycosylation is achieved by glycosyl hydrolases or glycosyltransferases. While glycosyl hydrolases primarily catalyze other reactions, transglycosylation is induced by altering reaction conditions or using suitable acceptors other than water.
