Characteristics of Stevia

Stevia is a plant with a strong sweet flavor. It has been used in sweetened drinks and teas since the 16th century. Eight different sweet components (glycosides) can be extracted from stevia: stevioside, rebaudioside A, C, D, E, and F, steviol glycosides, and dulcoside A. In addition, stevia and its extracts can be used as non-nutritive sweeteners (calorie-free) and herbal supplements. They are also a healthy alternative to sugar in many meals and beverages. Besides these characteristics, stevia and its extracts are known to lower blood glucose, lower blood pressure, control body weight, prevent cardiovascular disease, combat allergies, and reduce fatigue. Based on the many advantages of stevia, research on the production of stevia is necessary.

  • Three-step extraction method with water extraction, alcohol precipitation, and ion exchange resin separation
    This process is complete, efficient, and non-toxic and is an excellent extraction method for stevia in food applications.
    The extracted substances of steviol glycosides are more diverse than those of other carbohydrate derivatives. Thus, the separation of the extracted substances is a crucial step. In this regard, the separation of these molecules using ion exchange resins is an effective method.
