Overview of Acidic Hydrolysis of Starch

Starch is a kind of natural polysaccharide, which is a polymer with high molecular weight. Although starch belongs to sugars, it has no sweet taste. Starch is difficult to dissolve in cold water and expands in hot water to form a paste. However, starch will be hydrolyzed in the presence of acid, which is as follows: starch, red dextrin, colorless dextrin, maltose, glucose. Starch hydrolysis is a method with a long history in starch Chemical Modification. Its main advantage is that the technological process is simple, the structure and properties of starch are changed without destroying starch granules, and malt dextrin products with different degrees of polymerization are prepared.

The preparation of maltose and glucose from starch by acid hydrolysis is an important research direction in biology and botany. The water-holding capacity of the product obtained by this process is significantly higher than that of the original starch, and the hygroscopicity of the product is better.   • Starch hydrolysate detection service
    CD BioGlyco has provided an Agilent 1200 LC analyzer, an oscillometric refractive detector (RID), and an analytical column with deionized water as the mobile phase for the initial detection and analysis of the hydrolysis products of starch. The products are also tested for sugar content using a UV spectrophotometer.
  • The product performance analysis
    The water-holding capacity of the products of starch acid hydrolysis is an important characteristic. At CD BioGlyco, we use the centrifuge method to test water-holding capacity. The hygroscopicity of the product can be measured according to the moisture absorption equilibrium curve and critical relative humidity (CRH).
