Processed by physicochemical or other methods, the starch natively extracted from plants is endowed with special properties and becomes the modified starch which overcomes the limitations of native starches and widens the utilization of starch. Depending on the classification of starch raw materials, modified starch can be divided into corn/potato/rice/cassava/wheat/bean and other modified starch types. Depending on the category of modification, modified starch includes physically/chemically/enzymatically/genetically/complexly modified starch types. Modification can alter features of the starch including gelatinization, swelling, solubility, retrogradation and pasting quality, rheological properties, and digestibility.
To enhance the physicochemical characteristics of native starch and achieve better results in various formulations, physical, chemical, and biological modifications has reported to prepare modified starch. Physical modification is comparatively safe and preferable over chemical modification, while the latter is commonly carried out in industry due to efficient costs and convenience. Biological modification effectively reduces the yields of byproducts.
