GLs are composed of sugars and lipids. There are more ways to classify GLs, among which they can be divided into simple GLs and complex GLs, including glycoglycerolipid, glycosylated sterols, glycopeptidolipid, etc. GLs have a variety of properties and play an important role in immune response regulation, cell signaling, etc.

Compared with chemical surfactants, GL biosurfactants are non-toxic and are widely used in cosmetics, detergents, treatment of heavy metal pollution, etc. Currently, the main GL products sold on the market include rhamnolipids and sophorolipids. As a new type of green GL surfactant, alkylpolyglucosides (APGs) are also widely used in personal care products, cosmetics, and membrane protein research. In addition to microbial fermentation and enzymatic synthesis, GLs can also be obtained by chemical synthesis. For example, APG is an established surfactant industrially produced by Fischer glycosylation.
