Biosynthesis of Potato Starch

Potato starch exists in the thin wall of cells in the tuber with granules forming. The starch granules are usually round or oval, with a 25-100 um diameter. The internal structure of the granules is weak and the phosphate group charge in the molecular structure is mutually exclusive, so the effect of potato starch expansions is better. It is composed of 21% amylose and 79% amylose. It is a highly sticky and highly transparent paste. Its molecules contain phosphate groups and no fatty acids. Tuber starch content has to have an optimal range for table and processing potatoes, and starch yield is a decisive criterion for production or industrial uses. These quality traits are therefore based on breeding programs aiming at the selection of improved varieties for direct consumption, processing, and industry.
