The Composition of Wheat Starch

The polysaccharide stored in wheat is mainly starch, which is composed of two polymers, amylose and amylopectin.

The amylose/amylopectin ratio decides the size of wheat starch granules, which exhibits a trimodal distribution: large A-granule, intermediate B-granule, and small C-granule. Starches from different wheat cultivars vary in granule size distribution.

Wheat starch is commonly applicated in food, chemical, petrochemical, pharmaceutical, fermentation, textile, and paper industries. In food applications, wheat starch is used as a tenderizer, thickener, preservative, and swelling agent. In nonfood applications, it is used as a flocculating agent and internal sizing agent in papermaking, as a thickener of the drilling fluids in the petrochemical industry, as a binder in animal feeds, to stiffen clothes, to produce biodegradable, nontoxic detergents and plastics, and as an ingredient in pharmaceutical preparation, drug delivery, and bone cement.

  • Common process in wheat starch production
  • The methods of wheat starch production can be divided into two categories: extracting starch from wheat flour and extracting starch directly from wheat grains.

    • Extracting starch from wheat flour: Dry-willing Process and Wet-milling Process. The latter is usually used in production, including Halle fermentation process, Alsatian process, Longford-Slotter process, Farmarco process, etc. Martin (dough-washing) process, Raisio process, and hydrocyclone (dough-batter) process are the most common processes in wheat starch production.
      • Martin (dough-washing) process: Mixing flour and water and forming a stiff dough, washing dough and separating starch and gluten, refining and drying starch.
      • Martin (dough-washing) process: Mixing flour and water and forming a stiff dough, washing dough and separating starch and gluten, refining and drying starch.
      • Hydrocyclone (dough-batter) process: Mixing flour and water and forming a flowable batter, shear mixing with water and forming a homogeneous dispersion, filtering, separating starch by hydrocyclones, refining and drying starch.
    • Extracting starch directly from wheat grains: Soaking process (acid or alkali soaking, ammonia soaking, and sodium sulfite soaking), solvent process. The former is commonly used.
  • Novel technologies in wheat starch production process
    • High-pressure disintegration process is the most advanced wheat starch production process: Rapidly mixing flour and warm water and forming a smooth slurry, high-pressure shearing and separating starch in slurry, diluting and subjecting into a decanter centrifuge, gathering starch.

  • Wheat starch structure and properties characterization
  • We provide characterization services for granule size distribution and morphology, amylose/amylopectin ratio, lipid and protein content, crystallinity, gelatinization, retrogradation, swelling power, pasting properties, digestibility, etc. The utilized methods and instruments include differential scanning calorimeter (DSC), X-ray diffractometry, Brabender visco-amylograph, rapid visco-analyzer, enzymatic hydrolysis, etc.
