The polysaccharide stored in wheat is mainly starch, which is composed of two polymers, amylose and amylopectin.

The amylose/amylopectin ratio decides the size of wheat starch granules, which exhibits a trimodal distribution: large A-granule, intermediate B-granule, and small C-granule. Starches from different wheat cultivars vary in granule size distribution.
