The Characteristics of Amylo-1,6-Glucosidase

Amylo-1,6-glucosidase plays an important role in the degradation of glycogen with independent catalytic activity. It is usually present as part of a bifunctional enzyme. Amylo-1,6-glucosidase only hydrolyzes α -1,6 bonds in starch, glycogen, and derived oligosaccharides to produce sugars with an α configuration. When starch or glycogen is digested by amylo-1,6-glucosidase, the glucan chains in these glycans are cut from their non-reducing ends and phosphorylase-restricted dextrin is truncated to other chains by the α -1,6 bond. The 4- α -glucan transferase activity of the bifunctional protein transfers the maltotriose unit to the nonreducing end of the other chains to form the α -1,4 bond, whose amylo-1,6-glucosidase activity hydrolyzes the remaining α -1,6 glucose-based stubs to release α -glucose. Adding amylo-1,6-glucosidase effectively hydrolyzes α -1,6 glycosidic bond, improves the conversion rate and purity of modified starch, and shortens the enzymatic digestion time.
