Properties of Psicose

Psicose is a rare sugar that is found in small amounts in wheat, barley, processed sugar cane, and beet molasses. It is the epimer corresponding to the third carbon of fructose, belongs to ketohexose, and also exists in a small amount in the mixed syrup of fructose and glucose. Psicose has 70% of the sweetness of traditional sweetener sucrose, but hardly provides any calories, and is known as the most potential sucrose substitute.

This manufacturing method has mild reaction conditions, high activity, low dosage, and good environmental compatibility. Therefore, it is not only beneficial to reduce the cost of industrialized production, but also to conform to the current production principles of green and environmental protection.
