Beta-Glucan Structure-Function Relationship

β-Glucan is a polysaccharide widely present in microorganisms, mushrooms, and plants of different sources. β-Glucan has different primary structures and conformation. The primary structure type is determined by the degree of glycosidic bonds, branching, and polymerization. The conformation of dextran usually manifests as irregular curling, single helix, or triple helix, and is affected by the primary structure, intermolecular force, temperature, and solvent. β-Glucan of different bacteria because of its different types and numbers of side chain residues on the biological activity of the body is also different. In the past few years, complex mass spectrometry techniques and instrumentation have developed rapidly in the biomedical field. Contemporary glycobiology also benefits from these developments, and the study of glycan structure requires a combination of high-throughput techniques to reliably identify glycan structure.
