Physicochemical Properties of Oligosaccharides

Oligosaccharides are a type of carbohydrate that consists of a chain of 3 up to 10 monosaccharides connected by glycosidic bonds. Those carbohydrates are procured by isolation from natural resources, including milk, vegetables, and fruits, and by chemical or biotechnological processes. Oligosaccharides are classified into digestible or non-digestible according to their physiological effects. Besides, compared to mono- and disaccharides, oligosaccharides with higher molecular weights exhibit greater viscosity in solution. The stability of oligosaccharides is influenced by factors such as the composition of sugar residues, the form of the ring, the anomeric configuration, and the types of linkage. In general, β-linkages are stronger than α-linkages, and hexoses exhibit stronger linkages compared to pentoses.
