Overview of Starch Phosphorylation
Starch is one of the most abundant natural polymers in higher plants and the main source of energy for human beings in the biosphere. At the initial stage of starch synthesis or degradation, glucose is phosphorylated before entering the corresponding enzymatic reaction system. In plants, starch phosphorylation is the only substitution process, which occurs in the synergistic reaction of a series of enzymes and can only be carried out on the branched-chain structure. To some extent, the degree of phosphorylation modification of starch reflects the digestibility of starch, and it is also a special method of Chemical Modification. Generally speaking, starch and starch derivatives are a kind of excellent material with great potential for many uses, so their production has always been the focus of biological research.

On the other hand, we also provide comprehensive analysis of the mechanical properties (universal mechanical tester) and adsorption (thermal conductivity detector-mass spectrometry, TCD-MS) of starch derivatives.
