The Specificity of Pullulanase

Pullulanase is the most important class among family 13 glycosyl hydrolytic enzymes. Pullulanase hydrolyzes pullulan, starch, and other carbohydrates by breaking both the α -1,6 and α -1,4 glycosidic bonds. Specifically cut the amylopectin branch point α -1, 6 glycosidic bonds, thus cutting the whole branch structure, forming amylose. It is more crucial for industrial applications than the other hydrolases due to its special characteristics. There are five different types of pullulanase, including pullulanase types I and II, and pullulan hydrolase types I, II, and III. Pullulanase has high demand in the starch processing industry for the manufacturing of maltotriose, maltotetraose, fructose, panose, isopanose, and glucose syrups. Based on the variability of hydrolysis products and the acting substrates, pullulanase is divided into the following:

Pullulanase Treatment Services at CD BioGlyco

We use preheating, pullulan enzyme digestion, and centrifugation to separate the pullulan branches from Native Starch. The structures filled by the short pullulan branched chains are gelatinized during preheating, so we use pullulanase to digest and then centrifugate to remove from the starch granules, to collect thermally stable structures rich in pullulan long branched chains.

We use a high-temperature preheating method to promote starch gelation and enzymatic digestion to provide customers with high-quality amylopectin. At CD BioGlyco, we collect pullulanase-treated starch in three steps:

  • Partially gelatinized starch
  • Hydrolysis of partially gelatinized starch using pullulan enzyme
  • Collection of the enzymatic digest by centrifugation

Applications

  • Pullulanase-treated starch produces mild sweetness-based high fructose maltose syrup.
  • Pullulanase-treated starch can be used in the detergent industry.

  • Pullulanase-treated starch can be used in the preparation of resistant starch and dental plaque control agents.
