Functions of Cyclodextrin Glycosyltransferase

Cyclodextrin glycosyltransferase (CDTase, EC 2.4.1.19) is an Endoenzyme, a member of the α-amylase family. This enzyme catalyzes four kinds of reactions by cleaving α-1,4 glycosidic bonds present in the inner part of a polysaccharide chain. CDTase usually has minor hydrolysis activity and mainly catalyzes three transglycosylation reactions: cyclization, coupling, and disproportionation. In addition to the hydrolysis of α-1,4 and 1,6 glycosidic bonds, new α-1,3,α-1,4, and α-1,6 bonds can also be formed. The ability of CDTase to produce cyclodextrins from starch by cyclization is the basis for its industrial application. This is the basis for its industrial application. CDTase-treated starch products are non-toxic, colorless, and odorless. It has a wide range of applications in the fields of food, medicine, agriculture, textile, environmental protection, cosmetics, biotechnology and analytical chemistry, etc.
