Properties of Fructose
Fructose is a polyhydroxy ketone monosaccharide and is found in many plants, flowers, and fruits. It is the sweetest natural sweetener, its sweetness is 1.5 times that of sucrose, and it can reach 1.8 times at low temperatures. As a sweetener, although its sweetness is much lower than synthetic sweeteners, it is widely used in many fields because of its nutritional properties and non-toxic side effects.

- Liquefaction: The starch molecules are broken down by enzymes under defined temperature, pressure, and reaction time.
- Saccharification: The starch is broken down into glucose by glucoamylase and the amylase is added immediately to pump the slurry into the mash tank.
- Primary and membrane filtration: The glucose containing various impurities separated from the liquefaction and saccharification processes is filtered using membranes.
- First ion exchanging: When the liquid is cooled below 50°C, it is sent to the ion exchange system.
- First evaporation: Concentrate the refined liquid to the desired value in an evaporator.
- Isomerization: The isomerization system is a key component of the fructose production line, used to produce fructose 42 from glucose.
- De-colorization and second demineralization: Fructose 42 demineralized.
- Second evaporation: Concentrate fructose 42 using an evaporator.
- Chromatography Separation and carbon filtration: Fructose 55 is separated and purified by chromatography.
- Sterilization, evaporation, and storage.

Applications
- After fructose is absorbed into the human body, it is metabolized in the liver and is less dependent on insulin. It can be used as a good nutritional sweetener for diabetes and cardiovascular patients.
- Fructose metabolism does not produce lactic acid and can inhibit protein consumption in the body. It is used to prepare functional drinks for physical fitness.
- In the pharmaceutical industry, fructose can be made into injections related to cardiovascular diseases, diabetes, brain diseases, and other diseases.
