GAs (1,4-α-D-glucan glucohydrolase, EC 3.2.1.3) have poor specificity and can react with many substrates, which not only cuts the α -1,4-glycosidic bond from the non-reducing end of starch molecules but also the α -1,6-glycosidic bond. Glucoamylase also hydrolyzes dextrin, maltose, glycogen, etc. The majority of glucoamylases are multidomain enzymes consisting of a catalytic domain connected to a starch-binding domain by an O-glycosylated linker region. Glucoamylase is a single-chain acid glycohydrolase that can hydrolyze starch into glucose, with a hydrolysis ratio of 99.9% and is usually used as a glycemic agent for starch. Glucoamylase-treated starch increases water-holding capacity or heat-resistant behavior, minimizes syneresis, and improves thickening.
