The Effect of Erythritol

Erythritol is a kind of tetra-carbon polyol with a molecular weight of 144, it has a white crystal appearance, and its sweetness is about 70% sucrose. It is widely distributed in nature, including lichens, seaweed, mushrooms, and all kinds of plants. Because bacteria, mold, or yeast can ferment erythritol, it is also found in fermented foods such as fruit wine, and soy sauce. Erythritol is often used as a sweetener and excipient because of its low calorie, low sweetness, and high stability. Erythritol, as a functional sweetener in the world, has a broad development prospect. At present, the manufacturing methods of erythritol mainly include chemical synthesis and Microbial Fermentation.   • The specific operation process is as follows: firstly, hydrogen peroxide is added to the gluconate solution, and erythritol is obtained by hydrogenation in the presence of nickel, cobalt, and other metal salts. In the production process, to maintain the normal reaction and reduce the side reaction, we will control the temperature of the reaction solution below 35°C.

      Enzyme-catalyzed conversion to erythrose-4-phosphate.

      Hydrogenated to erythritol.

    • Methods of analysis
