MAE introduces microwaves to a traditional extracting approach. This combination of techniques heats the sample, causing the internal temperature of the sample to rise rapidly. Product release is facilitated by pyrolysis, flow shear, and aerosol effects. Microwave allows for uniform heating within the sample, avoiding localized overheating or denaturation. MAE has been applied to a variety of polysaccharide extractions from a range of sources, including plants, oceans, insects, and more. For example, alginate extracted by MAE has a higher viscosity and better bioactivity. MAE of chitosan is important in food preservation and pharmaceuticals. With the in-depth exploration of the MAE mechanism and the improvement of the conditions of the extracting process, the extracting efficiency and quality will be further improved in the future, and their application fields will be further broadened.
