What Is Cassava Starch?

Cassava starch is stored in the root of cassava, which is planting in tropical zones. The starch content is usually higher in the bitter cassava type than in other types, so the bitter type is cultivated for extracting starch. The variety and planting time of cassava have no significant effect on the granule distribution and amylose/amylopectin ratio of starch but show differences in swelling and solubility.

Widespread Applications

Cassava starch has excellent physical and chemical properties and processing characteristics such as low gelatinization temperature, high level of purity and paste viscosity/clarity, good film forming, and strong adhesion. In food, textile, papermaking, pharmaceutical, and construction industries, cassava starch has special uses that are difficult to be replaced by other starches. Especially, cassava starch is commonly used in biodegradable products, replacing plastics in conventional packing materials. The domestic demand for cassava starch is expected to exceed 4.9 million tons in 2028.
