Applications of Pullulan

Pullulan is a water-soluble polysaccharide polymer made by a yeast called Aureobasidium pullulans. It consists of maltotriose duplicate units linked by α-1,6 glycosidic bonds, which in turn consists of three glucose units linked by α-1,4 glycosidic linkages. Pullulan is a random coil glucan that is non-toxic, and edible. Pullulan and its derivatives have great potential for use in cosmetics, pharmaceuticals, etc., compared with others.

Pullulan has well physicochemical properties which can be used in pharmaceuticals for drug delivery systems. Due to its low digestibility, pullulan is not easily absorbed by the intestinal tract and can be added to foods instead of starch to produce low-calorie foods. Research has shown that pullulan can be used as a raw material for natural films, as well as a water-soluble packaging material to prevent oxidation. Since pullulan is odorless, it can also be developed for use as a mouth freshener or antiseptic, making it a high-tech bioproduct with great research value and application prospects.
